I Would Like to Make You an Omelet

I remember very vividly starting off in the kitchen with omelet-making. This was really the only thing I remember making on my own in the kitchen as a kid! It started when I was about seven years old. When I was nine, I remember Santa bringing me my very own omelet pan and spatula! (And yes, I still believed in Santa at the age of nine and at the age of 50!) The funny thing is, I was not ever super fond of them myself. I preferred my eggs over easy with toast. But what I remember about why I became an omelet maker from the age of 7 to now is because I just loved making them for others! I would make them for my family, I would make them when my friends stayed over night. I would make them at my Godparent's house when my parents were on a trip. I would make them for camp friends, college friends, Namibian friends and whoever would eat them. It is no wonder why I feel as though I am an omelet expert! Although I would never be too big for my britches because they key, really, is the pan and the heat. Of course, quality ingredients too. I would have to acquaint myself with the stove and pan if I was making an omelet somewhere other than my own kitchen. I even made omelet's to order at The Wyndham Garden Hotel in Bloomington, MN way back when I had three jobs. I would make them here or there, I would make them anywhere - well, you get the idea.

What's better than a fluffy (NOT BROWN) omelet, a little sweet crunch from the homemade PBJ English muffins, a nice glass of water with a lemon, and your cozy apartment that really belongs to your two kitties and you're just a guest?


Not only am I an avid foodie, but I am also a movie/film buff! Old Hollywood, Vaudeville, classics, comedies, drama's - the dance, the music, the acting. My grandma and I had a very strong bond and she was who I always watched movies with. We watched the Oscars every year together. I think the biggest reason why I have wanted to be a performer for as far back as I can remember is because I long to move and affect others like the way actors and films move and affect me. So here is, I think, an exquisite scene from a delightful film called, "The Hundred-Foot Journey." It is a 2014 film starring Helen Mirren and Manish Dayal. I have made many omelets, like I said, but my very favorite one to make for myself is this simple herb & cheese omelet. An omelet needs your calm, undivided attention. Ahhhh, I hope you love this scene as much as I do.

I decided to make some Saturday omelets for me & Lars this morning. Remember, I’m a home cook, so I’m always learning. Although, I suspect great Chefs believe that is true for themselves as well. I didn’t ‘dice’ the Thai basil….I finely chopped it. Lol

Anyway, it was a delicious brunch.

Herby omelet with manchego (not fontina) with sausage & shiitakes (not chanterelles). Lol - Lars clued me in on a few mistakes. I can always count on him😊! Oh, and topped with sliced fresno peppers 🌶! Mmm
